I haven't yet tried this particular recipe, but I have used other recipes from this series and I really enjoy it. It always seems easier when you can see it happen.
My dad used to make these. I didn't watch the video, yet, but it looks like they used shredded potatoes. My dad would used leftover mashed potatoes and they were great, too.
